The Introduction: Gluten is a protein found in wheat and many grains. “Gluten Sensitivity” represents a spectrum of health conditions in which gluten has an adverse impact on the body. “Gluten-free” foods have become a major food trend; not surprisingly the projected growth of the gluten-free product market will be $6.6 billion by 2017. [1] One concern is that at the heart of this trend is that consumers are confused as to what gluten is and when it should be avoided; not helped by unclear or deceptive food labeling.

The Questions

1. The Implication: Imagine that your child was diagnosed with celiac disease. Design her a meal plan for one day.

Is this different than what you would generally eat or from what you would generally feed your child, assuming you have one?
What foods are you surprised to see on this list as ones to avoid?
Other children in her class at school have reported problems described as “wheat allergy” and “gluten sensitivity.” Are these the same condition as celiac? Explain any confusion that might exist in context of our current specific understanding.
