Paul A Young is a ground-breaking and inspirational chocolatier who is at the forefront of the British chocolate scene. Paul’s passion for his craft and his cutting edge creativity have won him numerous awards and led to him being ranked amongst the world’s best chocolatiers.

 

Paul has a reputation as an incredibly creative flavour alchemist who often develops flavour combinations that are original, experimental, sometimes daring. He is the only chocolatier in London working in a truly artisan way. He and his team make all their creations completely by hand in the kitchens at each of the current 3 shops, in small batches and at every stage using fresh ingredients. Compounds, concentrates, essences, preservatives and additives are not used.

 

Paul’s background wasn’t as a trained chocolatier but  as a successful head pastry chef in top London restaurants before he began to follow his passion for chocolate and opened his first shop in Camden in 2006. Since then he has won numerous industry awards, including in 2014 Outstanding British Chocolatier by the International Chocolate Awards. Due to his success he has expanded to 3 shops (the information for the above three paragraphs is from the Paul A Young website)

 

He is now planning to expand by a couple of shops each year in the big international cities for example New York, Tokyo, Paris, Singapore, Berlin and has asked you as an expert in Human Resource Planning familiar with the HRP module to give advice.

In each of his shops there are 3-5 people making chocolates and  this is beneficial as it creates a better product at the end and Paul is passionate about taking on apprentice chocolatiers who eventually master the art of making handmade chocolate- the skill and art form of being a chocolatier.
